Hi, I am Margarita Ribot, a qualified Nutrition & Health Coach passionate about healthy eating and cooking Mediterranean recipes. Thank you for stopping by Tasty Mediterraneo!
I am not a trained chef but a self-taught home cook. Most of my recipes are my family Mediterranean recipes and the others are the result of lots of experiments. For me, food is one of life’s greatest pleasures and I find in cooking a way to relax and to put love and health on the table for my beloved ones. I believe that using fresh organic ingredients and transforming them into a delicious and healthy meal is a real treat for our bodies and souls.
I am Spanish currently living in Ireland. My mum being original from Jaén (Andalusia) and my dad from Majorca (Balearic Islands) I grew up enjoying a healthy Mediterranean diet and lifestyle. I moved out of Spain several years ago to study in France, where I met my French-Lebanese husband. With my double competency: Engineer + MBA, I worked for 12 years in the corporate world with international experience and global responsibilities. This gave me the opportunity to travel around the world and to live in 4 different countries so far. As you can imagine, this international exposure has allowed me to discover many different types of food. But I have to admit that, amongst all of them, Mediterranean cuisine is my favourite by far.
A couple of years ago I decided to leave behind my corporate career to focus on my passion for nutrition. I graduated as a Nutrition & Health Coach, and I am currently studying a MSc in Food, Nutrition & Health at University College Dublin (UCD).
As well as Spanish, I speak fluent English and French.
Having family and friends from different origins has encouraged me to write this blog in as many languages as I can so that most of you can enjoy my recipes.
My mother in law helps me with the Arabic translation. She is an amazing woman who is very kind and happy to be part of Tasty Mediterraneo’s team.
Enough about me, let’s talk about Tasty Mediterraneo!
The Mediterranean Diet, Intangible Heritage of UNESCO, is one of the healthiest dietary patterns in the world. The Mediterranean Diet is neither a weight-loss regime nor a prescriptive diet, it is an eating style where large amounts of fruits and vegetables, legumes such as beans and lentils, nuts, whole grains and extra virgin olive oil (EVOO) are abundant.
With the hectic lives that we lead in today’s society, many people are far from having healthy eating and lifestyle habits. I strongly believe that many of the health conditions that people suffer from can be improved through a healthy diet. And most importantly, many conditions can be avoided by following a healthy diet and lifestyle.
I believe that a balanced diet such as the Mediterranean diet together with some form of exercise adapted to your needs is key to live healthy longer and to put you at a lower risk for cancer and other chronic diseases.
When you think about the many unnecessary ingredients and chemicals that you find on a prepared food label, you realise the importance of preparing a healthy meal at home from scratch.
Healthy eating is possible even on a restricted budget. It is important to take the time to cook healthy meals at home and to eat less fast food and processed meals. Believe it or not cooking can fit in a busy lifestyle. The recipes I share with you at Tasty Mediterraneo are healthy, rich in nutrients, affordable, very easy to prepare and most of them are ready in 30 minutes or less.
Whether you are vegetarian or vegan, or just somebody who would like to reduce meat consumption in your diet, Tasty Mediterraneo is born to offer you a wide variety of healthy and tasty recipes. Enjoy!
